I made this arugula pear salad for lunch, and it’s so fresh and delicious! Perfectly light and great for a quick meal.

Ingredients:
- 4 cups fresh arugula
- 1 ripe pear, thinly sliced
- 1/4 cup crumbled goat cheese (or feta)
- 1/4 cup walnuts, toasted
- 1/4 cup dried cranberries or pomegranate seeds
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- In a large bowl, combine the arugula, sliced pear, goat cheese, walnuts, and dried cranberries.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
