I made this arugula pear salad for lunch, and it’s so fresh and delicious! Perfectly light and great for a quick meal.

Ingredients:

  • 4 cups fresh arugula
  • 1 ripe pear, thinly sliced
  • 1/4 cup crumbled goat cheese (or feta)
  • 1/4 cup walnuts, toasted
  • 1/4 cup dried cranberries or pomegranate seeds
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
Instructions:

  1. In a large bowl, combine the arugula, sliced pear, goat cheese, walnuts, and dried cranberries.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
This salad is crunchy, sweet, and savory—perfect for any day!
