Asian Salad Recipe

Hey everyone! I just whipped up this super fresh and flavorful Asian Salad, and I had to share it with you all. It’s perfect for summer and so easy to make. Hope you love it as much as I do! 🌞

Ingredients:

  • 2 cups mixed greens (lettuce, spinach, arugula)
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 1/2 cup edamame (shelled)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted peanuts (optional)
  • 1 avocado, sliced
Dressing:

  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 garlic clove, minced
  • 1 tsp grated ginger
  • 1 tsp sriracha (optional, for a kick)
  • Juice of 1 lime
Instructions:

  1. In a large bowl, combine the mixed greens, red cabbage, carrots, bell pepper, cucumber, edamame, green onions, and cilantro.
  2. In a small bowl, whisk together all the dressing ingredients until well combined.
  3. Pour the dressing over the salad and toss everything together until evenly coated.
  4. Top with avocado slices and roasted peanuts if you like a bit of crunch.
  5. Serve immediately and enjoy!
