Ingredients:
- 2 ripe avocados
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup diced cucumber
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 2 tablespoons chopped fresh parsley
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 large whole wheat or spinach tortillas
- Optional toppings: crumbled feta cheese, sliced black olives, shredded lettuce
- In a large bowl, mash the ripe avocados with a fork until smooth.
- Add the drained and rinsed chickpeas to the bowl and lightly mash them with a fork, leaving some chickpeas whole for texture.
- Add the diced cucumber, red bell pepper, red onion, and chopped fresh parsley to the bowl with the avocado and chickpeas.
- Drizzle the lemon juice and olive oil over the salad mixture. Season with salt and pepper to taste. Mix well to combine.
- Lay out the tortillas on a clean surface. Divide the avocado and chickpea salad mixture evenly among the tortillas, spreading it out in a line down the center of each tortilla.
- Optional: Sprinkle crumbled feta cheese, sliced black olives, and shredded lettuce over the salad mixture on each tortilla.
- Roll up the tortillas tightly, tucking in the sides as you go, to form wraps.
