Ingredients:
- Baguettes or French rolls
- 1 lb pork tenderloin, thinly sliced
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons sugar
- 2 cloves garlic, minced
- 1 tablespoon lemongrass, finely chopped
- 1 carrot, julienned
- 1 daikon radish, julienned
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1/2 cup mayonnaise
- 1 tablespoon sriracha
- Fresh cilantro
- Jalapeño slices
- Cucumber, thinly sliced
- Marinate the pork with soy sauce, fish sauce, sugar, garlic, and lemongrass for at least 30 minutes.
- In a bowl, combine the carrot, daikon, rice vinegar, and 1 tablespoon sugar. Let it sit for 20 minutes to pickle.
