Hey everyone! Just wanted to share my go-to basil pesto recipe. It’s super simple, and honestly, once you make it fresh, it’s hard to go back to store-bought. Perfect for tossing with pasta, spreading on a sandwich, or using as a dip!

- 2 cups fresh basil leaves (packed)
- 1/2 cup grated Parmesan cheese
- 1/2 cup extra virgin olive oil
- 1/3 cup pine nuts (or walnuts if you're out of pine nuts!)
- 2-3 garlic cloves (adjust for how garlicky you like it)
- Salt and pepper to taste
- A squeeze of lemon juice (optional, but brightens it up!)
- First, toast the nuts in a pan for a few minutes if you want a bit more flavor, though it’s optional.
- Then, toss the basil, nuts, Parmesan, and garlic into a food processor and pulse until it’s all finely chopped.
- With the processor running, slowly pour in the olive oil until it’s all combined and smooth.
- Season with salt, pepper, and a squeeze of lemon juice if you like!
