Basil Pesto Recipe

Hey everyone! Just wanted to share my go-to basil pesto recipe. It’s super simple, and honestly, once you make it fresh, it’s hard to go back to store-bought. Perfect for tossing with pasta, spreading on a sandwich, or using as a dip!
Ingredients:
  • 2 cups fresh basil leaves (packed)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts (or walnuts if you're out of pine nuts!)
  • 2-3 garlic cloves (adjust for how garlicky you like it)
  • Salt and pepper to taste
  • A squeeze of lemon juice (optional, but brightens it up!)
Instructions:
  1. First, toast the nuts in a pan for a few minutes if you want a bit more flavor, though it’s optional.
  2. Then, toss the basil, nuts, Parmesan, and garlic into a food processor and pulse until it’s all finely chopped.
  3. With the processor running, slowly pour in the olive oil until it’s all combined and smooth.
  4. Season with salt, pepper, and a squeeze of lemon juice if you like!
