- 2-3 pounds of beef bones (preferably with marrow)
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 tablespoons apple cider vinegar
- 4 cloves garlic, smashed
- 1-2 bay leaves
- Salt and pepper to taste
- Water
- Roast the Bones: Preheat your oven to 400ยฐF (200ยฐC). Place the beef bones on a baking sheet and roast for 30 minutes until browned.
- Prepare the Broth: Transfer the roasted bones to a large pot. Add the onion, carrots, celery, garlic, bay leaves, and apple cider vinegar. Fill the pot with enough water to cover the bones.
- Simmer: Bring the pot to a boil, then reduce the heat to a simmer. Skim off any foam that rises to the surface. Simmer for 12-24 hours for the best flavor and nutrients.
- Strain: After simmering, strain the broth through a fine-mesh sieve into another pot or large bowl. Discard the solids.
- Season: Add salt and pepper to taste.
- Store: Let the broth cool. Store in airtight containers in the refrigerator for up to 5 days or freeze for later use.
