Made this navy bean soup last night, and it was so hearty and delicious. Perfect for a cozy, comforting meal!

Ingredients:
- 1 lb dried navy beans (soaked overnight)
- 1 ham bone or 2 cups diced ham
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 bay leaf
- 1 tsp thyme
- Salt and pepper to taste
- Sauté Veggies: In a large pot, sauté the onion, carrots, celery, and garlic until soft.
- Add Beans & Broth: Add the soaked beans, ham bone (or diced ham), chicken broth, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beans are tender.
- Shred Ham: If using a ham bone, remove it, shred the meat, and return it to the soup. Season with salt and pepper.
- Serve: Ladle into bowls and enjoy with some crusty bread!
