Ingredients:
- 1 lb dried navy beans (or Great Northern beans)
- 1 ham hock or 2 cups diced ham
- 1 large onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 bay leaf
- 8 cups chicken or vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
- Soak Beans: Soak the beans overnight in plenty of water. Drain and rinse before cooking.
- Cook the Soup: In a large pot, combine the soaked beans, ham hock, onion, carrots, celery, garlic, bay leaf, and broth. Bring to a boil, then reduce the heat and let it simmer for 1.5 to 2 hours, or until the beans are tender.
- Season: Remove the ham hock, shred the meat, and return it to the pot. Season with salt and pepper to taste.
- Serve: Garnish with fresh parsley if desired, and serve hot.
