I wanted to share my favorite beef chili recipe. Itās hearty, flavorful, and perfect for those cozy nights. Itās been a hit at every potluck Iāve brought it to! Feel free to tweak it to your likingāI think recipes are just a guideline anyway.

Ingredients:
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 lb ground beef (or ground turkey if you prefer!)
- 1 bell pepper, diced (any color works)
- 1 can (14 oz) diced tomatoes (with juice)
- 1 can (6 oz) tomato paste
- 1 cup beef broth (or water if in a pinch)
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tsp chili powder (more if you like it spicy!)
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large pot over medium heat. SautƩ the onion and garlic until fragrant and soft.
- Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, then drain any excess fat.
- Stir in the bell pepper and cook for 2ā3 minutes.
- Add the diced tomatoes, tomato paste, beef broth, beans, and all the spices. Mix well!
- Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for 20ā30 minutes, stirring occasionally.
- Taste and adjust seasoning as needed.
