There's nothing quite like a warm, hearty beef stew to comfort you on a chilly day. This recipe is packed with tender meat, flavorful vegetables, and rich broth. Perfect for family dinners or meal prepping, this beef stew is sure to become a favorite in your household.
Ingredients
- 2 lbs beef stew meat, cut into chunks
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, diced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 1 cup peas (optional)
- 2 tbsp flour (optional, for thickening)
Procedure
- Brown the Beef: Heat olive oil in a large pot over medium heat. Add the beef stew meat and brown on all sides. Remove the meat and set it aside.
- Sauté Veggies: In the same pot, add chopped onion and garlic. Sauté until they become soft and fragrant.
- Add Carrots and Potatoes: Stir in the carrots and potatoes, cooking for a few minutes.
- Combine Ingredients: Return the beef to the pot. Add beef broth, red wine (if using), tomato paste, thyme, rosemary, bay leaves, salt, and pepper. Bring to a boil.
- Simmer: Reduce the heat to low, cover, and let it simmer for about 2 hours, or until the meat is tender and the flavors have melded together. Stir occasionally.
- Optional Additions: In the last 15 minutes of cooking, add peas if desired. If you prefer a thicker stew, mix flour with a bit of water to create a slurry and stir it into the stew.
- Serve: Remove bay leaves and serve hot. Enjoy your delicious beef stew with a slice of crusty bread!
