Hey everyone! I wanted to share my go-to recipe for Beef Stew with Dumplings—perfect for those cozy nights when you just need some comfort food. It's hearty, filling, and the dumplings are chef's kiss . I’ve made this so many times, and it never fails!
Ingredients:
For the beef stew:- 2 lbs beef chuck, cut into bite-sized cubes
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 carrots, sliced
- 3 celery stalks, chopped
- 3 potatoes, peeled and diced
- 4 cups beef broth
- 1 cup red wine (optional but adds amazing flavor)
- 2 tbsp tomato paste
- 2 tbsp flour (for thickening)
- 1 bay leaf
- 1 tsp thyme
- Salt and pepper to taste
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 3 tbsp cold butter, diced
- ½ cup milk (or more as needed)
- 2 tbsp fresh parsley, chopped (optional but adds a nice touch)
Directions:
- Brown the beef: Heat olive oil in a large pot and brown the beef cubes on all sides. Remove and set aside.
- Cook the veggies: In the same pot, sauté the onion, garlic, carrots, and celery until soft (about 5-7 minutes). Add the tomato paste and cook for another minute.
- Deglaze: Add the red wine (if using) and scrape up all the flavorful bits from the bottom of the pot.
- Add everything in: Return the beef to the pot, then add the potatoes, beef broth, bay leaf, thyme, and season with salt and pepper. Bring to a boil, then lower the heat and let it simmer for about 1.5 to 2 hours, until the beef is tender. (Pro tip: the longer it simmers, the better the flavor!)
- Make the dumplings: While the stew is simmering, combine the flour, baking powder, and salt in a bowl. Cut in the butter until it resembles coarse crumbs, then stir in the milk and parsley to form a soft dough.
- Add dumplings: Drop spoonfuls of the dough onto the stew (you'll want to keep them spaced out so they don't merge). Cover and cook for another 15-20 minutes until the dumplings are fluffy and cooked through.
- Serve: Dish up a bowl of that hearty stew, making sure everyone gets at least a couple of those delicious dumplings. Trust me, you'll be going back for seconds.
