Ingredients:

  • 2 lbs (900g) stew beef, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and chopped
  • 4 potatoes, peeled and chopped
  • 2 cups (475ml) beef broth
  • 1 cup (240ml) red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • Chopped fresh parsley for garnish (optional)
Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the stew beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Return the browned beef to the pot. Add the chopped carrots, potatoes, beef broth, red wine (if using), tomato paste, thyme, rosemary, salt, and pepper. Stir to combine.
  4. Bring the stew to a simmer, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
  5. In a small bowl, mix the flour with a bit of water to make a slurry. Stir the slurry into the stew to thicken the broth.
  6. Continue to simmer the stew, uncovered, for another 10-15 minutes until the broth has thickened.
  7. Taste and adjust the seasoning if needed. Serve the beef stew hot, garnished with chopped fresh parsley if desired.
