- 1 lb beef sirloin or tenderloin, thinly sliced
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 cup sour cream
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
- Cooked egg noodles or rice, for serving
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced beef and cook until browned, about 2-3 minutes per side. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and cook until softened and translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are golden brown and any liquid released has evaporated, about 5-6 minutes.
- Sprinkle the flour over the mushrooms and onions, and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually pour in the beef broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until thickened, about 5 minutes.
- Reduce the heat to low and stir in the sour cream, Dijon mustard, and Worcestershire sauce until smooth and combined. Season with salt and pepper to taste.
- Return the cooked beef to the skillet and stir until heated through, about 2-3 minutes.
- Serve the beef stroganoff over cooked egg noodles or rice, garnished with chopped parsley.
