- 1 lb (450g) beef sirloin, cut into thin strips
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz (225g) mushrooms, sliced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup (240ml) beef broth
- 1 cup (240ml) sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Cooked egg noodles or rice, for serving
- Chopped parsley, for garnish
- In a large skillet, melt the butter over medium-high heat. Add the beef strips and cook until browned on all sides. Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 2-3 minutes.
- Add the sliced mushrooms to the skillet and cook until they are soft and golden brown.
- Sprinkle the flour over the vegetables in the skillet and stir to combine. Cook for 1-2 minutes to cook off the raw flour taste.
- Slowly pour in the beef broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until it thickens slightly.
- Return the cooked beef to the skillet and stir to coat it with the sauce.
- Reduce the heat to low and stir in the sour cream, Dijon mustard, and Worcestershire sauce. Cook gently until heated through, but do not boil.
- Season the beef stroganoff with salt and pepper to taste.
- Serve the beef stroganoff over cooked egg noodles or rice.
- Garnish with chopped parsley before serving.
