Ingredients:
  • 1 pound shrimp, deveined with shells on
  • 1/2 cup plus 2 tablespoons olive oil, divided
  • Salt and freshly ground black pepper, to taste
  • 1 large egg
  • 1 garlic clove
  • 1 poblano pepper, seeded
  • 1/2 cup grapeseed or canola oil
  • 1 tablespoon fresh lime juice
  • 6 to 8 fresh basil leaves
Directions:
  1. Place the shrimp (shells on) in a large bowl. Add 1 tablespoon of olive oil, salt, and pepper, and toss to coat.
  2. Heat a cast iron skillet over medium heat until it's nice and hot. Add 1 tablespoon of olive oil to the skillet.
  3. Cook the shrimp in the skillet, without overcrowding, for 3 to 4 minutes on each side. You may need to do this in batches. Once cooked, remove the shrimp from the skillet and let them cool.
  4. In a food processor, combine the egg, poblano pepper, garlic clove, lime juice, and basil. Blend until smooth. With the processor running, slowly add the 1/2 cup of grapeseed oil and continue processing until the mixture is smooth and thick.
  5. Transfer the mixture to a bowl. Gradually whisk in the remaining 1/2 cup of olive oil, just a drop or two at a time. Season with salt and pepper to taste.

Hey guys! Love this idea! I think adding some creepy, curled shrimp to mimic Beetlejuice’s hands would be awesome, though keeping it spooky but tasty is the trick! 🦐👻
