Hey everyone! Yesterday morning, I tried this Beetlejuice-inspired shrimp cocktail, and let me tell you, it was a spooky hit! If you're a fan of bold flavors and a touch of Halloween fun, this recipe is for you. It's got all the zesty goodness with a bit of a Beetlejuice twist, and it's super easy to whip up. Let’s get into it!
Ingredients:
- 1 pound shrimp, deveined with shells on
- 1/2 cup plus 2 tablespoons olive oil, divided
- Salt and freshly ground black pepper, to taste
- 1 large egg
- 1 garlic clove
- 1 poblano pepper, seeded
- 1/2 cup grapeseed or canola oil
- 1 tablespoon fresh lime juice
- 6 to 8 fresh basil leaves
- Place the shrimp (shells on) in a large bowl. Add 1 tablespoon of olive oil, salt, and pepper, and toss to coat.
- Heat a cast iron skillet over medium heat until it's nice and hot. Add 1 tablespoon of olive oil to the skillet.
- Cook the shrimp in the skillet, without overcrowding, for 3 to 4 minutes on each side. You may need to do this in batches. Once cooked, remove the shrimp from the skillet and let them cool.
- In a food processor, combine the egg, poblano pepper, garlic clove, lime juice, and basil. Blend until smooth. With the processor running, slowly add the 1/2 cup of grapeseed oil and continue processing until the mixture is smooth and thick.
- Transfer the mixture to a bowl. Gradually whisk in the remaining 1/2 cup of olive oil, just a drop or two at a time. Season with salt and pepper to taste.
