Ingredients:
For the Grits:
- 1 cup stone-ground grits
- 4 cups water or chicken broth
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
- Salt and pepper to taste
For the Shrimp:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Cook the Grits:
- In a large pot, bring water or chicken broth to a boil.
- Slowly whisk in the grits and reduce heat to low.
- Cover and cook, stirring occasionally, until grits are tender (about 20-25 minutes).
- Stir in cheese and butter until melted and smooth. Season with salt and pepper.
- Prepare the Shrimp:
- Heat olive oil in a large skillet over medium heat.
- Add garlic and cook until fragrant, about 1 minute.
- Add shrimp, paprika, and cayenne (if using). Cook until shrimp are pink and opaque, about 2-3 minutes per side.
- Stir in lemon juice and season with salt and pepper.
- Serve:
- Spoon the cheesy grits onto plates.
- Top with shrimp and garnish with fresh parsley.
