- 1 1/2 cups all-purpose flour
- 1/2 cup old-fashioned oats
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 2 cups mixed berries (fresh or frozen)
- 1/4 cup granulated sugar (adjust to taste)
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
- In a large bowl, combine flour, oats, brown sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Press half of the mixture into the bottom of the prepared pan to form the crust. Set the remaining mixture aside for the crumble topping.
- In a medium saucepan, combine the berries, granulated sugar, lemon juice, and cornstarch.
- Cook over medium heat, stirring frequently, until the berries release their juices and the mixture thickens (about 5-7 minutes). Let cool slightly.
- Spread the berry filling evenly over the crust in the baking pan.
- Sprinkle the reserved crumble mixture over the top of the berry filling.
- Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
- Allow the bars to cool completely in the pan before cutting into squares.
