Just made this avocado chickpea salad, and it’s my new go-to for a quick, healthy meal. So fresh and filling!

Ingredients:- 1 can chickpeas, drained and rinsed
- 1 ripe avocado, diced
- 1 small cucumber, chopped
- 1/2 red onion, finely diced
- 1/2 cup cherry tomatoes, halved
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish (optional)
- In a large bowl, combine the chickpeas, avocado, cucumber, red onion, and cherry tomatoes.
- Drizzle with olive oil and lemon juice, then toss gently to combine.
- Season with salt and pepper, and garnish with fresh parsley or cilantro if desired.
