Just made this avocado chickpea salad, and it’s my new go-to for a quick, healthy meal. So fresh and filling!

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 1 small cucumber, chopped
  • 1/2 red onion, finely diced
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish (optional)
Instructions:

  1. In a large bowl, combine the chickpeas, avocado, cucumber, red onion, and cherry tomatoes.
  2. Drizzle with olive oil and lemon juice, then toss gently to combine.
  3. Season with salt and pepper, and garnish with fresh parsley or cilantro if desired.
