Ingredients:


  • 2 large egg yolks
  • 2 tablespoons lukewarm water
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1/2 cup unsalted butter (8 tablespoons), cut into small pieces
  • 1/4 teaspoon fine sea salt, or more to taste
  • 1/8 teaspoon cayenne pepper, or more to taste
Instructions:

  1. Prepare the Sauce: In a small non-reactive saucepan, whisk together the egg yolks, lukewarm water, fresh lemon juice, and Dijon mustard until well combined.
  2. Add Butter: Add the pieces of butter to the saucepan with the egg mixture.
  3. Heat and Whisk: Place the saucepan over medium-low heat. Whisk the mixture constantly as the butter melts. It will become frothy as it heats. Continue whisking for about 3 minutes, or until the sauce thickens enough to coat the back of a spoon. Remove from heat immediately.
  4. Seasoning: Season the hollandaise sauce with fine sea salt and cayenne pepper, adjusting to taste.
  5. Serve: Serve the hollandaise sauce immediately or keep it covered to stay warm. If the sauce thickens too much, whisk in a teaspoon of warm water to loosen it.
