For Cake
- 2 cups sugar
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 3/4 cup baking cocoa
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 cup canola oil
- 1 cup brewed coffee
- 1 cup whole milk
- 2 large eggs
- 1 teaspoon vanilla extract
For Icing
- 5 tablespoons all-purpose flour
- 1 cup whole milk
- 1/2 cup butter, softened
- 1/2 cup shortening
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 to 4 tablespoons sprinkles (optional)
Preparation:
- Preheat oven to 325°. Grease and flour two 9-in. round baking pans, then sift dry ingredients into a large bowl. Add oil, coffee, and milk; mix at medium speed for 1 minute. Incorporate eggs and vanilla; beat for an additional 2 minutes (batter will be thin). Pour into prepared pans.
- Bake until a toothpick inserted in the center comes out clean, about 25-30 minutes. Let cool in pans for 10 minutes before transferring to wire racks to cool completely.
- For the icing, whisk flour and milk until smooth in a small saucepan. Bring to a boil over medium heat; cook and stir until thickened, about 1-2 minutes. Transfer to a small bowl and refrigerate until chilled.
- In a large bowl, beat butter, shortening, sugar, and vanilla until creamy for 3-4 minutes. Add chilled milk mixture and beat for 10 minutes. Optionally, stir in sprinkles. Spread frosting between layers and over the top and sides of the cake.
