For the Cake:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee, cooled
- 1/2 cup coffee liqueur (optional)
- 1/2 cup granulated sugar
- 1 cup heavy cream
- 8 oz mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Cocoa powder
- Shaved chocolate or chocolate curls (optional)
- Preheat Oven:
- Preheat your oven to 350Ā°F (175Ā°C). Grease and flour an 8-inch round cake pan.
- Make the Cake:
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream the butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, then add the milk and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely.
- Prepare the Coffee Mixture:
- In a small bowl, combine the brewed coffee, coffee liqueur (if using), and granulated sugar. Stir until the sugar is dissolved.
- Make the Mascarpone Cream:
- In a large bowl, whip the heavy cream until stiff peaks form.
- In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Assemble the Cake:
- Once the cake is cool, slice it into two layers.
- Place one layer of cake on a serving plate and brush with half of the coffee mixture.
- Spread a layer of mascarpone cream over the cake.
- Top with the second layer of cake and brush with the remaining coffee mixture.
- Spread the remaining mascarpone cream on top and sides of the cake.
- Garnish and Chill:
- Dust the top of the cake with cocoa powder and garnish with shaved chocolate or chocolate curls if desired.
- Refrigerate the cake for at least 4 hours or overnight to allow the flavors to meld.
