Best Navy Bean Soup

Hey guys! 🍲 Made this navy bean soup last night, and it was so hearty and delicious. Perfect for a cozy, comforting meal!

Ingredients:

  • 1 lb dried navy beans (soaked overnight)
  • 1 ham bone or 2 cups diced ham
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 tsp thyme
  • Salt and pepper to taste
Instructions:

  1. Sauté Veggies: In a large pot, sauté the onion, carrots, celery, and garlic until soft.
  2. Add Beans & Broth: Add the soaked beans, ham bone (or diced ham), chicken broth, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beans are tender.
  3. Shred Ham: If using a ham bone, remove it, shred the meat, and return it to the soup. Season with salt and pepper.
  4. Serve: Ladle into bowls and enjoy with some crusty bread!
