I was craving nachos but wanted something a bit healthier, so I tried these sweet potato nachos and OMG—they’re amazing! Crispy, sweet, and loaded with all the toppings.

Best Sweet Potato Nachos Recipe
Ingredients:- 2 large sweet potatoes, thinly sliced
- 1 tbsp olive oil
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños
- 1/4 cup chopped red onion
- 1 avocado, diced
- Fresh cilantro for garnish
- Salt and pepper to taste
- Sour cream and salsa for serving
- Preheat your oven to 425°F (220°C).
- Toss the sweet potato slices with olive oil, salt, and pepper. Spread them out on a baking sheet.
- Bake for 20-25 minutes, flipping halfway, until they’re crispy.
- Remove from the oven and top with black beans, cheese, tomatoes, jalapeños, and onions.
- Return to the oven for 5 minutes, just until the cheese is melted.
- Top with avocado, cilantro, and serve with sour cream and salsa on the side.
