I was craving nachos but wanted something a bit healthier, so I tried these sweet potato nachos and OMG—they’re amazing! Crispy, sweet, and loaded with all the toppings.

Best Sweet Potato Nachos Recipe​

Ingredients:

  • 2 large sweet potatoes, thinly sliced
  • 1 tbsp olive oil
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños
  • 1/4 cup chopped red onion
  • 1 avocado, diced
  • Fresh cilantro for garnish
  • Salt and pepper to taste
  • Sour cream and salsa for serving
Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Toss the sweet potato slices with olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Bake for 20-25 minutes, flipping halfway, until they’re crispy.
  4. Remove from the oven and top with black beans, cheese, tomatoes, jalapeños, and onions.
  5. Return to the oven for 5 minutes, just until the cheese is melted.
  6. Top with avocado, cilantro, and serve with sour cream and salsa on the side.
They’re perfect for a snack or even as a main meal!
