I recently tried making Bolivian Pique Macho, and it was an explosion of flavors and textures! This hearty dish is a beloved street food in Bolivia, combining tender beef, spicy sausages, and a medley of vegetables, all topped with crispy fries. It’s perfect for sharing or enjoying as a filling meal any time of day. Here’s how you can prepare your own Pique Macho at home:
Ingredients:
- For the Meat Mixture:
- 1 lb (450g) beef (such as sirloin or flank steak), cut into thin strips
- 1/2 lb (225g) chorizo or spicy sausage, sliced
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 1 bell pepper (red or green), chopped
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- For Serving:
- 3-4 medium potatoes, peeled and cut into fries
- 1 cup of aji or hot sauce (optional, for extra spice)
- Fresh parsley or cilantro, chopped (for garnish)
- Lemon wedges (for serving)
Instructions:
1. Prepare the Fries:
- Start by frying the potato fries in hot oil until golden and crispy. You can also bake them in the oven for a healthier option. Set aside when done.
2. Cook the Meat:
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the beef strips and cook until browned, about 5-7 minutes. Remove the beef and set aside.
3. Sauté the Vegetables:
- In the same skillet, add the chopped onion, bell pepper, and garlic. Sauté until softened, about 3-4 minutes.
- Stir in the diced tomatoes, cumin, paprika, salt, and pepper, cooking for another 3-4 minutes.
4. Combine Everything:
- Add the cooked beef and sausage back into the skillet, mixing everything together. Cook for an additional 5 minutes, allowing the flavors to meld.
5. Serve:
- On a large plate, create a base with the crispy fries. Top with the meat mixture and garnish with chopped parsley or cilantro. Serve with lemon wedges and aji or hot sauce on the side.
