Growing up in Angola, I've always cherished the rich and diverse flavors of our traditional desserts. Today, let me share with you a delightful recipe for "Bolo Polana", a classic Angolan cake that's sure to satisfy your sweet cravings!

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup unsalted butter, softened
- 4 eggs
- 1 cup grated coconut
- 1 cup chopped walnuts
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 cup granulated sugar
- 1 cup water
- 1 cinnamon stick
- Zest of 1 lemon
- Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan.
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Sift the flour, baking powder, and salt together. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Fold in the grated coconut and chopped walnuts until evenly distributed throughout the batter.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the syrup. In a saucepan, combine the sugar, water, cinnamon stick, and lemon zest. Bring to a simmer over medium heat, stirring until the sugar is completely dissolved. Remove from heat and let it cool slightly.
- Once the cake is baked, remove it from the oven and immediately pour the warm syrup over the hot cake, allowing it to soak in.
