Growing up in Angola, I've always cherished the rich and diverse flavors of our traditional desserts. Today, let me share with you a delightful recipe for "Bolo Polana", a classic Angolan cake that's sure to satisfy your sweet cravings! 🍰✨

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 4 eggs
  • 1 cup grated coconut
  • 1 cup chopped walnuts
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
For the syrup:

  • 1 cup granulated sugar
  • 1 cup water
  • 1 cinnamon stick
  • Zest of 1 lemon
Procedure:

  1. Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Sift the flour, baking powder, and salt together. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  5. Fold in the grated coconut and chopped walnuts until evenly distributed throughout the batter.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the syrup. In a saucepan, combine the sugar, water, cinnamon stick, and lemon zest. Bring to a simmer over medium heat, stirring until the sugar is completely dissolved. Remove from heat and let it cool slightly.
  9. Once the cake is baked, remove it from the oven and immediately pour the warm syrup over the hot cake, allowing it to soak in.
