- 1 cup black beans, cooked (canned beans can be used)
- 1/2 pound smoked sausage, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tomato, diced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 cup cooked rice
- 1/2 cup shredded cheese (such as mozzarella or cheddar)
- 4 large bell peppers, halved and seeds removed
- Olive oil, for drizzling
- Salt and pepper, to taste
- Preheat your oven to 375°F (190°C).
- Heat a drizzle of olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic and diced bell pepper to the skillet. Cook for an additional 2-3 minutes until fragrant.
- Stir in the diced smoked sausage and cook until browned and slightly crispy, about 5 minutes.
- Add the diced tomato, cooked black beans, ground cumin, smoked paprika, salt, and pepper to the skillet. Stir to combine and cook for another 5 minutes to allow the flavors to meld together.
