  • 1 pound pork shoulder, cut into chunks

  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
For Serving:
  • Cooked white rice
  • Sliced orange
  • Chopped fresh cilantro or parsley, for garnish

  1. Drain and rinse the soaked black beans. Set aside.
  2. Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and minced garlic to the pot and cook until softened and fragrant, about 5 minutes.
  3. Add pork shoulder chunks, sliced smoked sausage, and beef brisket or pork ribs to the pot. Cook until the meats are browned on all sides, about 8-10 minutes.
  4. Stir in soaked black beans, bay leaves, ground cumin, smoked paprika, salt, pepper, and enough water to cover the ingredients by about 2 inches.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer gently for 2-3 hours, stirring occasionally, until the beans and meats are tender and the stew has thickened.
  6. Taste and adjust seasoning with salt and pepper, if needed.
  7. Remove the bay leaves from the pot and discard.
