I made this butternut squash bisque the other day and wow, it's like a warm hug in a bowl! Super creamy, yet healthy. Definitely a fall favorite for me now.

Butternut Squash Bisque Recipe​

Ingredients:

  • 1 medium butternut squash, peeled and cubed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup coconut milk (or heavy cream)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Salt and pepper to taste
  • Olive oil for sautéing
Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft.
  2. Add cubed butternut squash and pour in vegetable broth. Bring to a boil, then reduce to a simmer.
  3. Cook until the squash is tender, about 15-20 minutes.
  4. Remove from heat and use an immersion blender to blend until smooth (or transfer to a blender in batches).
  5. Stir in coconut milk, cinnamon, nutmeg, salt, and pepper.
  6. Simmer for another 5 minutes, adjusting seasoning as needed.
Perfect with a slice of crusty bread on a chilly day!
