Although Pecorino is the classic cheese for cacio e pepe, if you only have Parmesan on hand, it can work just as well. It will still provide the meal a creamy, cheese flavour, but because Parmesan has a milder flavour than Pecorino, the taste may alter significantly. Tailor the amount to your preference and savour your cacio e pepe!
