Here are the ingredients you need:
- 6 cups grated carrots
- 1 cup brown sugar
- 1 cup raisins
- 4 eggs
- 1 ½ cups white sugar
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup crushed pineapple, drained
- 3 cups all-purpose flour
- 4 teaspoons ground cinnamon
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 1 cup chopped walnuts
- Mix grated carrots and brown sugar in a bowl. Let it sit for 1 hour, then add raisins.
- Preheat your oven to 350°F (175°C). Grease and flour two 10-inch round cake pans.
- In a big bowl, beat eggs until they're light. Gradually add white sugar, oil, and vanilla, then stir in pineapple.
- In another bowl, mix flour, cinnamon, baking soda, and salt. Add this mixture to the egg mixture and stir until combined. Add the carrot mixture and walnuts, and mix well.
- Pour the batter evenly into the prepared cake pans.
- Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool for 10 minutes before removing them from the pans. Then, let them cool completely before serving. Enjoy your Carrot Cake!
