I recently discovered a gem of a recipe that uses carrot greens, which I used to toss out without a second thought! Turns out, they make a fantastic pesto that's fresh, flavorful, and incredibly easy to make. Trust me, this one's a keeper. Here's how you do it:

Ingredients:
  • 1 cup carrot greens (stems removed)
  • 1/2 cup fresh basil leaves
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup pine nuts or walnuts
  • 2 cloves garlic
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • A squeeze of lemon juice

Instructions:
  1. Start by washing the carrot greens thoroughly and removing any tough stems.
  2. In a food processor, combine the carrot greens, basil, Parmesan, nuts, and garlic. Pulse a few times until roughly chopped.
  3. With the processor running, slowly pour in the olive oil until the mixture is smooth and well-blended.
  4. Season with salt, pepper, and a squeeze of lemon juice to taste.
  5. Give it a final pulse and your carrot greens pesto is ready!
I love spreading this pesto on toast, mixing it into pasta, or even using it as a dip for veggies. It's a fantastic way to use up those carrot tops and add a burst of fresh flavor to your meals. Enjoy! 🥕✨
