Ingredients:
- Carrot greens (from about 1 bunch of carrots)
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Optional: a pinch of red pepper flakes for some heat
Instructions:
- Prepare the Greens: Start by washing the carrot greens thoroughly to remove any dirt. Trim off any thick stems and chop the greens into bite-sized pieces.
- Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about a minute until it becomes fragrant, but be careful not to burn it.
- Cook the Greens: Add the chopped carrot greens to the skillet. Stir well to coat them with the garlic and oil. Sauté for about 3-5 minutes, or until the greens are wilted and tender.
