Hi everyone! Got a tasty treat to share with you, the Cauliflower Cheese! It's easy to make and so yum. Here's what you'll need:

INGREDIENTS:

  • 1 cauliflower (about 600g), cut into florets
  • 60g butter
  • 60g plain flour
  • 1 tbsp English mustard powder
  • 600ml whole milk
  • Pinch of cayenne pepper
  • Sea salt and freshly ground black pepper
  • 100g mature Cheddar cheese, grated
  • 100g Lancashire cheese, grated
  • 100g Cheshire cheese, grated
  • 50g breadcrumbs
  • 1 tbsp thyme leaves

INSTRUCTIONS:
  1. Preheat your oven to 200°C (180°C for fan ovens, Gas Mark 6). Boil salted water in a large pot, add cauliflower, cook for 4-5 minutes until tender, then drain and cool in ice water. Transfer to an ovenproof dish.
  2. Melt butter in a saucepan, add flour and mustard powder to make a smooth paste. Gradually whisk in milk until smooth, then boil and simmer until thickened. Season with cayenne pepper.
  3. Mix three cheeses. Add half to the sauce, stir until melted, then pour over cauliflower.
  4. Mix breadcrumbs, thyme, and remaining cheese for the topping. Sprinkle over the cauliflower.
  5. Bake for 15-20 minutes until golden and bubbly.
