Need a quick and delicious dinner idea? This Cheesy Gnocchi with Spinach and Sausage is sure to be a hit with the whole family!
Ingredients:
- 1 lb Italian sausage (mild or spicy), casings removed
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 package (16 oz) gnocchi
- 4 cups fresh spinach, roughly chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions:
- Cook the Sausage:
- In a large skillet, heat the olive oil over medium-high heat. Add the sausage and cook until browned, breaking it up into crumbles as it cooks. Remove the sausage from the skillet and set aside.
- Prepare the Sauce:
- In the same skillet, add the chopped onion and sauté until translucent. Add the minced garlic and cook for another minute.
- Pour in the chicken broth, heavy cream, and diced tomatoes. Stir in the dried basil, dried oregano, red pepper flakes (if using), salt, and pepper. Bring the mixture to a simmer.
- Cook the Gnocchi:
- Add the gnocchi to the skillet and cook according to package instructions, usually about 3-5 minutes, until they float to the top and are cooked through.
- Combine and Finish:
- Stir in the cooked sausage and fresh spinach, cooking until the spinach is wilted.
- Sprinkle the shredded mozzarella and grated Parmesan over the top. Cover the skillet and cook until the cheese is melted and bubbly.
- Serve:
- Serve the cheesy gnocchi hot, garnished with additional Parmesan if desired.
