Ingredients:​

  • 4 cups frozen hash browns, thawed
  • 1 cup sour cream
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: crushed cornflakes, chopped green onions, cooked bacon bits

Instructions:​

  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large mixing bowl, combine the thawed hash browns, sour cream, condensed cream of chicken soup, 1 cup of shredded cheddar cheese, melted butter, garlic powder, salt, and pepper. Mix until well combined.
  3. Spread the potato mixture evenly into the prepared baking dish.
  4. Sprinkle the remaining shredded cheddar cheese over the top of the potato mixture.
  5. If desired, sprinkle crushed cornflakes over the cheese layer for added crunch.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
  8. Garnish with chopped green onions and cooked bacon bits, if desired, before serving.
