Have a cheesy night!
Ingredients:
- 4 cups frozen hash browns, thawed
- 1 cup sour cream
- 1 can (10.5 oz) condensed cream of chicken soup
- 2 cups shredded cheddar cheese, divided
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional toppings: crushed cornflakes, chopped green onions, cooked bacon bits
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- In a large mixing bowl, combine the thawed hash browns, sour cream, condensed cream of chicken soup, 1 cup of shredded cheddar cheese, melted butter, garlic powder, salt, and pepper. Mix until well combined.
- Spread the potato mixture evenly into the prepared baking dish.
- Sprinkle the remaining shredded cheddar cheese over the top of the potato mixture.
- If desired, sprinkle crushed cornflakes over the cheese layer for added crunch.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
- Garnish with chopped green onions and cooked bacon bits, if desired, before serving.
