Ingredients:


For the Grits:


  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

For the Shrimp:


  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:


  1. Cook the Grits:
    • In a large pot, bring water or chicken broth to a boil.
    • Slowly whisk in the grits and reduce heat to low.
    • Cover and cook, stirring occasionally, until grits are tender (about 20-25 minutes).
    • Stir in cheese and butter until melted and smooth. Season with salt and pepper.
  2. Prepare the Shrimp:
    • Heat olive oil in a large skillet over medium heat.
    • Add garlic and cook until fragrant, about 1 minute.
    • Add shrimp, paprika, and cayenne (if using). Cook until shrimp are pink and opaque, about 2-3 minutes per side.
    • Stir in lemon juice and season with salt and pepper.
  3. Serve:
    • Spoon the cheesy grits onto plates.
    • Top with shrimp and garnish with fresh parsley.
