Ingredients:
- 1 sheet frozen puff pastry, thawed
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup chopped fresh spinach
- 1 egg yolk, beaten
- Freshly ground black pepper to taste
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Unfold the puff pastry sheet on a lightly floured surface. Roll out gently to flatten any creases.
- In a medium bowl, combine the ricotta cheese, Parmesan cheese, sun-dried tomatoes, spinach, and black pepper. Stir until well combined.
- Spread the ricotta cheese mixture evenly over the puff pastry dough, leaving a 1-inch border around the edge.
- Brush the edges of the dough with the beaten egg yolk.
- Starting from the long end, roll up the puff pastry dough tightly into a log.
- Using a sharp knife, cut the log into 1-inch slices.
- Carefully stand each pinwheel slice on its end on the prepared baking sheet, forming a cup shape. Brush the tops of the pinwheels with the remaining egg yolk.
- Bake for 20-25 minutes, or until the puff pastry is golden brown and flaky.
