Ingredients:

  • For the Stew:
    • 2 lbs beef stew meat, cut into bite-sized pieces
    • 2 tablespoons olive oil
    • 1 large onion, chopped
    • 3 cloves garlic, minced
    • 4 cups beef broth
    • 1 cup red wine (optional)
    • 4 large carrots, sliced
    • 3 potatoes, peeled and cubed
    • 2 celery stalks, chopped
    • 1 can (14.5 oz) diced tomatoes
    • 2 tablespoons tomato paste
    • 1 tablespoon Worcestershire sauce
    • 1 teaspoon dried thyme
    • 1 teaspoon dried rosemary
    • Salt and pepper to taste
  • For the Cheesy Toast:
    • 1 baguette, sliced into rounds
    • 2 cups shredded cheddar cheese
    • 1/4 cup grated Parmesan cheese
    • 2 tablespoons butter, melted
    • 1 teaspoon garlic powder
    • 1 teaspoon dried parsley

Instructions:​

  1. Prepare the Stew:
    • In a large pot, heat the olive oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove and set aside.
    • In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.
    • Return the beef to the pot. Add the beef broth, red wine (if using), carrots, potatoes, celery, diced tomatoes, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
    • Bring to a boil, then reduce the heat to low. Cover and simmer for 2-3 hours, or until the beef is tender and the vegetables are cooked through.
  2. Prepare the Cheesy Toast:
    • Preheat your oven to 375°F (190°C).
    • Place the baguette slices on a baking sheet. Brush each slice with melted butter and sprinkle with garlic powder and dried parsley.
    • Top each slice with shredded cheddar and a sprinkle of Parmesan cheese.
    • Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  3. Assemble and Serve:
    • Ladle the hot stew into bowls.
    • Top each bowl with a cheesy toast slice, letting it soak up some of the delicious broth.
