  • 4 cups fresh cherries, pitted and chopped
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon almond extract (optional)

    Instructions
  1. Prepare the Cherries
    • Wash, pit, and chop the cherries.
  2. Cook the Cherries
    • In a large saucepan, combine the chopped cherries, sugar, and lemon juice.
    • Bring the mixture to a boil over medium-high heat, stirring frequently.
  3. Simmer and Thicken
    • Reduce the heat to medium and let the mixture simmer.
    • Continue to stir frequently until the jam thickens, about 20-30 minutes. You can test the thickness by placing a small spoonful on a chilled plate. If it gels and holds its shape, it's ready.
  4. Add Flavor
    • If using, stir in the almond extract for an extra depth of flavor.
  5. Jar the Jam
    • Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
    • Wipe the rims of the jars with a clean cloth, place the lids on, and screw on the bands until fingertip tight.
  6. Process the Jars
    • Process the jars in a boiling water bath for 10 minutes to seal them properly.
    • Remove the jars and let them cool completely.
  7. Store
    • Check the seals after cooling. Store sealed jars in a cool, dark place. Refrigerate after opening.
