Ingredients:
- 1 pint cherry tomatoes, halved
- 8 ounces fresh mozzarella pearls or small cubes
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Fresh basil leaves for garnish (optional)
- Crusty bread for serving (optional, but highly recommended!)
Instructions:
- Heat the Pan: In a large sauté pan, heat the olive oil over medium heat. You want the oil to be nice and hot but not smoking.
- Sauté the Garlic: Add the minced garlic to the pan and sauté for about 1 minute, or until it’s fragrant and just starting to turn golden. Be careful not to burn it!
- Add the Tomatoes: Toss in the halved cherry tomatoes and stir to coat them in the garlicky oil. Let them cook for about 3-5 minutes, stirring occasionally, until they start to soften and release their juices.
- Season and Flavor: Sprinkle in the dried basil and oregano, along with a pinch of salt and black pepper. Stir everything together and let it cook for another 2 minutes to allow the flavors to meld.
- Add the Mozzarella: Remove the pan from heat and immediately stir in the fresh mozzarella pearls or cubes. The residual heat from the tomatoes will start to melt the cheese just a bit, making it wonderfully gooey.
- Finish with Balsamic: Drizzle the balsamic vinegar over the top and give everything a gentle toss to combine.
- Garnish and Serve: Transfer the sauté to a serving dish, garnish with fresh basil leaves if you have them, and serve immediately.
- Optional: This dish is fantastic on its own, but serving it with some crusty bread on the side to soak up all those delicious juices is highly recommended!
