Hey friends! Yesterday morning, I whipped up some Chicharrones de Pollo, and let me tell you—it was crispy, juicy, and full of flavor! This Dominican-style fried chicken is the perfect comfort food. The citrusy marinade really makes the chicken pop, and the crunch is out of this world. You can totally make this at home, and trust me, it’s not as hard as it sounds! So there you go—crispy, golden Chicharrones de Pollo! I tried this recipe yesterday, and it was a hit. Perfect for sharing (or keeping all to yourself, no judgment here!).
- 1 pound skinless, boneless chicken thighs, cut into chunks
- 1 lemon, zested and juiced
- 1 orange, zested and juiced
- 1 lime, zested and juiced
- ½ cup minced garlic
- 2 tablespoons adobo seasoning
- 1 teaspoon onion powder
- 1 teaspoon freshly ground black pepper
- 1 teaspoon ground coriander
- 2 (.81 ounce) packets Sazon seasoning with coriander and achiote
- 1 quart oil for frying
- 3 cups all-purpose flour
- 1 cup cornstarch
- A pinch of salt
- A pinch of freshly ground black pepper
- In a large bowl, mix the chicken pieces with the lemon, orange, and lime juice and zest, minced garlic, adobo seasoning, onion powder, black pepper, coriander, and Sazon seasoning. Stir everything together, then cover and let it marinate in the fridge for at least 4 hours to soak up all that flavor.
- When you’re ready to fry, heat the oil in a large pot over medium heat until it reaches about 300°F (150°C).
- In another large bowl, combine the flour, cornstarch, salt, and pepper.
- Take the chicken out of the marinade and toss it in the flour mixture until each piece is well-coated.
- Fry the chicken in small batches for 5 to 10 minutes, until golden brown and crispy. Make sure the internal temperature hits at least 165°F (74°C).
- Let the chicken drain on some paper towels, then dig in!
