- 1/2 cup pickle juice
- 1/4 cup milk
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon cayenne pepper (optional)
- Marinate the Chicken:
- In a zip-top bag or a shallow dish, combine the pickle juice and milk.
- Add the chicken breasts, ensuring they are fully submerged.
- Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
- Prepare the Seasoning:
- In a small bowl, mix together the smoked paprika, salt, black pepper, garlic powder, onion powder, dried oregano, dried basil, and cayenne pepper (if using).
- Season the Chicken:
- Remove the chicken breasts from the marinade and pat them dry with paper towels.
- Rub the olive oil all over the chicken breasts.
- Sprinkle the seasoning mix evenly over both sides of the chicken breasts, pressing it in to adhere.
- Grill the Chicken:
- Preheat your grill or grill pan to medium-high heat.
- Grill the chicken breasts for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred and cooked through.
- If using a grill pan, you can press down with a spatula to get those nice grill marks.
- Rest and Serve:
- Remove the chicken from the grill and let it rest for a few minutes to allow the juices to redistribute.
- Slice and serve on a salad, in a sandwich, or with your favorite sides.
