Apple Cider and Dijon Mustard Vinaigrette:
- 1/4 cup extra-virgin olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 1 teaspoon freshly squeezed lemon juice
- 1 teaspoon white wine vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 4 cups curly kale, ribs removed and roughly chopped
- 1 cup shredded green cabbage
- 1/4 cup roughly chopped roasted and salted almonds
- Prepare the Vinaigrette:In a mason jar or medium bowl, combine olive oil, apple cider vinegar, Dijon mustard, maple syrup, lemon juice, white wine vinegar, salt, and black pepper. Shake well or whisk until fully combined. Refrigerate until ready to use.
- Assemble the Salad:Place chopped kale in a large bowl and drizzle 2 tablespoons of the prepared vinaigrette over it. Gently massage the dressing into the kale with your hands for a couple of minutes to tenderize the kale.
- Combine Ingredients:Add shredded green cabbage to the bowl with kale and toss to combine evenly.
