My family doesn't always get to eat lunch together because of work and school, so when we get the chance, I want to serve something everyone will enjoy. Here's a recipe for one of the dishes I cook with my mom: Chicken and Vegetable Lettuce Wrap.
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts (or thighs)
1 tablespoon olive oil
1 tablespoon soy sauce (or tamari for gluten-free)
1 teaspoon honey
1 teaspoon garlic powder
1 teaspoon ginger (fresh or ground)
Salt and pepper to taste
For the Veggies:
1 red bell pepper, thinly sliced
1 cucumber, julienned
1 carrot, shredded
1/2 cup red cabbage, thinly sliced
1 avocado, sliced
Fresh cilantro, chopped
Green onions, sliced
For the Sauce:
3 tablespoons peanut butter or almond butter
1 tablespoon soy sauce
1 tablespoon lime juice
1 teaspoon honey or maple syrup
1 teaspoon sesame oil (optional for extra flavor)
A pinch of chili flakes (optional, for heat)
For the Wraps:
Large butter lettuce leaves (or romaine lettuce leaves)
Instructions:
Prepare the Chicken:
In a small bowl, whisk together the olive oil, soy sauce, honey, garlic powder, ginger, salt, and pepper.
Slice the chicken into thin strips or bite-sized pieces.
Heat a skillet over medium heat and cook the chicken in the sauce mixture for about 6-8 minutes, until the chicken is cooked through and slightly caramelized. Set aside.
Prepare the Veggies:
Slice the bell pepper, cucumber, and red cabbage into thin strips.
Shred the carrot and slice the avocado.
Make the Sauce:
In a bowl, mix the peanut butter (or almond butter), soy sauce, lime juice, honey, sesame oil, and chili flakes until smooth. If the sauce is too thick, add a splash of water to thin it out.
Assemble the Wrap Bar:
Arrange the cooked chicken, fresh veggies, and sauce on a large platter or separate bowls.
Place the lettuce leaves on a separate plate or bowl, ready to be used as wraps.
Let everyone assemble their own wraps, adding a variety of veggies, chicken, and a drizzle of the peanut sauce.
