I recently tried my hand at making Chicken Mull, and it was a heartwarming and flavorful experience! This traditional dish from the Malabar region of India is a comforting chicken stew that's rich in spices and perfect for cozy meals. The combination of tender chicken and aromatic spices, along with the warmth of coconut milk, makes it an absolute delight. Here’s how you can make Chicken Mull at home:
Ingredients:
- For the Chicken Mull:
- 1 lb (450g) chicken, cut into pieces (bone-in for more flavor)
- 2 tablespoons coconut oil (or any cooking oil)
- 1 large onion, thinly sliced
- 2-3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2-3 green chilies, slit (adjust to taste)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- 2 medium tomatoes, chopped
- 1 can (14 oz) coconut milk
- 1-2 cups water (as needed)
- Salt, to taste
- Fresh cilantro, chopped (for garnish)
Instructions:
1. Heat the Oil:
- In a large pot, heat the coconut oil over medium heat. Add the sliced onions and sauté until they turn golden brown.
2. Sauté the Aromatics:
- Add the minced garlic, ginger, and green chilies to the pot. Sauté for another 2-3 minutes until fragrant.
3. Add Spices and Chicken:
- Sprinkle in the turmeric powder, red chili powder, and garam masala. Stir well to coat the onions and garlic with the spices.
- Add the chicken pieces and sear them for about 5-7 minutes, turning occasionally until they are browned on all sides.
4. Incorporate Tomatoes and Coconut Milk:
- Mix in the chopped tomatoes and cook until they soften. Then, pour in the coconut milk and add enough water to achieve your desired consistency. Stir well and season with salt.
5. Simmer:
- Cover the pot and let the Chicken Mull simmer on low heat for about 30-40 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
6. Adjust Seasoning:
- Taste the stew and adjust the salt and spices as needed. If you like it spicier, feel free to add more chili powder or fresh chilies.
7. Serve:
- Once cooked, remove from heat and garnish with fresh cilantro. Serve hot with rice, appams, or naan for a complete meal.
