- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk or heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 4-6 tablespoons ice water
- Preheat your oven to 375Ā°F (190Ā°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5-7 minutes.
- Stir in the diced chicken breast and frozen peas. Cook for an additional 2-3 minutes.
- Sprinkle the flour over the chicken and vegetable mixture. Stir to coat evenly and cook for 1-2 minutes.
- Slowly pour in the chicken broth and milk or heavy cream, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until it thickens, about 5-7 minutes. Season with salt, pepper, and herbs if using. Remove from heat.
- In a separate bowl, prepare the crust. Combine the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together.
- Roll out the dough on a floured surface to fit the size of your baking dish.
- Pour the chicken and vegetable mixture into a baking dish. Carefully place the rolled-out dough over the filling, pressing the edges to seal. Cut a few slits in the crust to allow steam to escape.
- Bake the chicken pot pie in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
- Allow the pot pie to cool for a few minutes before serving.
