- 1/2 pound ground chicken
- 1/4 cup finely chopped green onions
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil

- 1/4 teaspoon black pepper
- 24 square wonton wrappers
- 6 cups chicken broth
- 2 cups water
- 2 carrots, thinly sliced
- 2 cups baby spinach leaves
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Sliced green onions for garnish (optional)
- In a large bowl, combine the ground chicken, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until evenly combined.
- Place a small spoonful of the chicken mixture in the center of each wonton wrapper. Moisten the edges of the wrapper with water, then fold it diagonally to form a triangle, pressing the edges to seal.
- Bring the two opposite corners of the triangle together and press to seal, forming a wonton shape. Repeat with the remaining chicken mixture and wonton wrappers.
- In a large pot, bring the chicken broth and water to a simmer over medium heat.
- Add the sliced carrots to the pot and simmer for 2-3 minutes until slightly softened.
- Carefully add the wontons to the simmering broth and cook for about 4-5 minutes, or until the wontons are cooked through and float to the surface.
- Stir in the baby spinach leaves, soy sauce, and sesame oil. Cook for an additional 1-2 minutes until the spinach is wilted.
- Season the soup with salt and pepper to taste.
- Ladle the chicken wonton soup into bowls and garnish with sliced green onions, if desired.
