- 2 medium carrots, sliced

- 1 cup lotus root, peeled and sliced (optional)
- 1 cup snow peas or green beans (optional)
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sugar
- 1 cup dashi (Japanese soup stock)
- 1 tbsp vegetable oil
