Enjoy the comforting and flavorful Chikuzenni, a traditional Japanese dish featuring a variety of simmered root vegetables and mushrooms in a savory sauce.
**Ingredients**:
- 2 medium carrots, sliced
- 1 daikon radish, peeled and cut into chunks
- 1 small sweet potato, peeled and cut into chunks
- 1 cup shiitake mushrooms, sliced
- 1 cup lotus root, peeled and sliced (optional)
- 1 cup snow peas or green beans (optional)
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sugar
- 1 cup dashi (Japanese soup stock)
- 1 tbsp vegetable oil
**Instructions**:
1. **Prepare the Vegetables**:
- If using lotus root, soak it in water with a little vinegar to prevent discoloration. Drain before using.
- Prepare all vegetables and mushrooms as described.
2. **Sauté the Vegetables**:
- Heat vegetable oil in a large pan over medium heat.
- Add carrots, daikon radish, sweet potato, and lotus root. Sauté for 3-4 minutes until they start to soften.
3. **Add the Sauce**:
- Stir in soy sauce, mirin, and sugar. Mix well to coat the vegetables.
4. **Simmer**:
- Add dashi to the pan and bring to a simmer.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until the vegetables are tender and the flavors have melded.
5. **Add Snow Peas**:
- If using snow peas or green beans, add them in the last 5 minutes of cooking.
6. **Serve**:
- Serve the Chikuzenni hot, either as a main dish or a side.
