Ingredients:
- 10 oz (about 300g) tortilla chips
- 2 cups salsa verde (store-bought or homemade)
- 1 cup cooked shredded chicken (optional)
- 1/2 cup crumbled queso fresco or feta cheese
- 1 avocado, sliced
- 4 eggs
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
- Lime wedges for serving
Instructions:
1. In a large skillet, heat the salsa verde over medium heat until simmering.
2. Add the tortilla chips to the skillet, tossing gently to coat them evenly with the salsa verde.
3. If using shredded chicken, sprinkle it over the top of the tortilla chips.
4. Cook for 3-5 minutes, stirring occasionally, until the tortilla chips are slightly softened but still crispy.
5. While the chilaquiles are cooking, heat a separate skillet over medium heat and fry the eggs to your desired doneness.
6. Once the chilaquiles are ready, remove the skillet from the heat and sprinkle the crumbled queso fresco or feta cheese over the top.
7. Divide the chilaquiles among serving plates.
8. Top each serving with sliced avocado and a fried egg.
9. Garnish with chopped cilantro and season with salt and pepper to taste.
10. Serve immediately with lime wedges on the side.
