Ingredients

  • 4 Chilean sea bass filets (6-8 ounces each)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons butter or olive oil
  • 1 clove garlic, minced
  • 1 large lemon, quartered

Instructions

  1. Pat dry the fish filets and season one side with salt and pepper.
  2. In a non-stick pan or skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for a minute. Push the garlic to the side with a rubber spatula.
  3. Add the remaining tablespoon of butter. Once melted, place the Chilean sea bass filets in the pan, seasoned side down. Cook for 2-3 minutes until the underside is golden. Season the top side with salt and pepper.
  4. Carefully flip the fish and cook for another 2 minutes, or until the fish is fully opaque.
  5. Remove the sea bass filets from the pan and drizzle each with the pan juices. Squeeze a lemon quarter over each filet and serve immediately.

Notes

  • To Store: Keep leftover sea bass in an airtight container in the refrigerator for up to three days.
  • To Freeze: Store cooked and cooled bass in a sealable container in the freezer for up to two months. Thaw completely before reheating.
  • To Reheat: Microwave the fish for 30-40 seconds or reheat in a non-stick pan until crispy around the edges.
